Discovery Zone: the Incredible Edible Egg (WIN)

So, yesterday, I started sharing a little bit about the Farm to Table Tour I attended a few months ago. I hope you enjoyed the Bacon and Egg Grilled Cheese. Make sure you let me know if you tried it. Today is all about telling you a few things I discovered while I was there, and, as promised, there's a little something for you to win.

I learned some fascinating things about eggs and was given a thorough look behind the scenes of egg farming. One of my more surprising discoveries was that it's not in a chicken's nature to roam free. That, along with a glimpse into how chickens treat each other in a free-range situation, led me to abandon my expensive free-range egg buying habit. I could spend the whole post talking about that issue alone, but it's not as fun as telling you about some of the other things I was taught.

Thanks to the absolutely wonderful Howard Helmer, I now know how to create a great omelet. The secret? 2 eggs and 2 tablespoons of water AND dig a hole, fill it up.


Here I am learning from the great Jeffrey Saad, who was so patient with me as I tried (three times) to flip an egg. I finally got it. He pointed out that eggs love medium heat, and also taught us not to overcook the eggs and to stop just shy of them being done because the residual heat will cause them to continue to cook.



And, here are some neat egg facts:
  • Eggs provide one of the highest quality proteins of any food available.
  • There is no nutritional difference between brown eggs and white eggs.
  • One egg has 13 essential vitamins and minerals, as well as antioxidants and only 70 calories
  • The protein in eggs provides sustained energy because it does not  cause a surge in blood sugar or insulin levels.
  • The choline found in eggs is necessary for normal cell activity, liver function and transporting nutrients throughout the body.
